BREADED OKRA ON  WATERMELON SQUASH SALAD AND HOMEMADE POTATO CHIPS

INGREDIENTS

  • 2 cups Watermelon, rinds removed and diced
  • 1 bunch of Kale, washed stems removed and chopped
  • 1-2 Sweet peppers, washed seeds removed and thinly sliced
  • 1 head of Lettuce, washed and chopped
  • 1-2 Tomatoes, washed and diced
  • 1-2 cups Okra, prepped and breaded, recipe on blog
  • 1 Delicata squash, baked, recipe on blog
  • 1-3 purple potatoes, sliced thin in a mandolin slicer and placed in a ice cold bowl of water with a pinch of sea salt
  • Grapeseed oil or oil of choice
  • 1 tsp sea salt
  • 1 tsp cayenne pepper
  • 1 tsp coriander
  • 1 tsp ginger
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp smoked sea salt
  • 1 tbsp dill weed

DIRECTIONS

  1. In a large bowl toss together all vegetables aside from potatoes, seasonings, watermelon and squash and set aside
  2. In a deep fryer or pot add oil and allow to get hot
  3. Add breaded okra and cook until golden brown, let drain and add to salad
  4. Either fry or bake until golden brown, around 5-6 minutes in fryer or 15-20 minutes in oven at 400ºF
  5. Pair with salad and enjoy!

WATERMELON SQUASH SMOOTHIE

INGREDIENTS

  • 2 cups watermelon, rinds removed and diced
  • ½ cup kale, washed and chopped
  • ½ cup lettuce, washed and chopped
  • 1 cup delicata squash, cooked
  • 1 tbsp ginger powder
  • 1 tbsp agave
  • ½ tbs date syrup
  • A pinch of sea salt
  • ½ cup sparkling water
  • ½- 1 cup hemp milk
  • 1 peach, sliced
  • ½ -1 red banana, diced

DIRECTIONS

  1. Take all ingredients and add to the blender and blend until desired consistency and transfer to the cup of choice and enjoy!
