ROASTED VEGGIE SALAD

INGREDIENTS

  • 1 Sweet potato, peeled and diced
  • 1 Acorn squash, peeled seeds removed and diced
  • 1 head of bok choy, washed  and chopped
  • 2 Red skin potatoes, washed and diced
  • 1 Radish, washed and diced
  • 1 bunch of swiss chard, washed and chopped
  • 1 Green bell pepper,washed seeds removed and diced
  • 2 bullhorn or other peppers of choice, washed and diced
  • 2 cloves garlic, minced
  • 1 tsp oregano
  • ½ tsp smoked sea salt
  • ½ tsp ginger powder
  • ½ tsp achiote powder
  • 1 head of Lettuce, washed and chopped
  • 1 tsp sea salt
  • 1 tsp cayenne pepper
  • 1 tbsp dill weed
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp thyme
  • 1 tsp cilantro
  • 1 tsp basil
  • 1 tsp annatto
  • 1 tsp toasted sesame seed oil
  • 1 tbsp grapeseed oil

DIRECTIONS

  1. Take all diced veggies and place on a baking sheet and drizzle with oil
  2. In an oven preheated to 400ºF, roast veggies for 25-35 min, stirring once 
  3. In a large bowl add in lettuce, chard and bok choy. Once veggies are done roasting add them to the salad with seasonings and toss to incorporate well and enjoy!

ROASTED VEGGIE STUFFED SPRING ROLL WITH CREAMY SESAME GINGER SAUCE

INGREDIENTS

  • 1 sweet potato, washed peeled and diced
  • 1 acorn squash, washed peeled and diced
  • 2-3 red skin potatoes, washed and diced
  • 3-4 radishes, washed and diced
  • 1 bulb of garlic, whole with top cut off
  • 2 bullhorn peppers or peppers of your choice, diced
  • 1 bell pepper, washed and diced
  • ½  head of bok choy, washed and chopped
  • ½  head of lettuce, washed and chopped
  • ½  bunch of swiss chard, washed and chopped
  • Grape seed oil or oil of choice
  • 1 tbsp toasted sesame seed oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • ½ tbsp sea salt
  • 1 tsp annatto powder
  • 1 tsp ginger powder
  • 1 tsp cayenne
  • 1 tbsp oregano
  • 1 tsp thyme
  • 1 tsp basil
  • 1 tsp key lime juice
  • 1 tsp coconut powder
  • 1 tbsp dill
  • Rice paper
  • Creamy sesame ginger sauce, recipe on blog

DIRECTIONS

  1. Preheat oven to 400ºF 
  2. Take diced veggies and toss with a bit of grape seed oil or oil of choice and seasonings and place on baking sheet and add to oven
  3. Allow to cook for 30-40 min, stirring halfway through
  4. Once finished cooking, take and toss with chopped lettuce and add to damp rice paper and roll.
  5. Dip in sesame ginger sauce and enjoy!
