PUMPKIN PIE SPICE GREEN SMOOTHIE WITH RED BANANAS AND PEACHES

INGREDIENTS

  • 1 cucumber, peeled and cut into chunks
  • A handful of kale, washed, de stemmed and chopped
  • A handful of lettuce, washed and chopped
  • ½-1 cup of hemp milk (recipe on strawberry blog post)
  • 2-3 peaches, peeled and cut into chunks and slightly frozen
  • 4 red bananas, peeled and cut into chunks and slightly frozen
  • 2 tablespoons agave
  • ½-1 teaspoon pumpkin pie spice
  • ½-1 teaspoon ground clove
  • Pinch of sea salt
  • 2 tablespoons apple syrup, optional, recipe on blog
    • Adjust all flavoring as needed

INSTRUCTIONS

  1. Take all ingredients and add to blender
  2. Blend until smooth and adjust to taste as desired
  3. Store in airtight container and enjoy

KOHLRABI SOUP

INGREDIENTS

  • 1 head of Bok choi, washed and chopped
  • 1 head of broccoli, washed and chopped
  • 1 bunch of kale, washed and chopped
  • 1 head of lettuce, washed and chopped
  • 1 kohlrabi, washed thinly sliced and cut in halves
  • Spring water
  • Green onions, washed and chopped
  • 2-3 purple potatoes, peeled and quartered
  • Vegetable stock, 1 container
  • 2 tablespoons Onion powder
  • 1 tablespoonThyme
  • 1 tablespoon Rosemary
  • 2 tablespoons Oregano
  • 2 teaspoons Ginger powder
  • 1 teaspoon Cayenne
  • 1 tablespoon Basil
  • ½ tablespoon Tarragon
  • 2 tablespoons Dill
  • 1 teaspoon Sea salt
  • 2 teaspoons Kelp

INSTRUCTIONS

  1. Take water and veggie stock and add to pot over medium-high heat
  2. Once broth comes to a boil add potatoes, broccoli, green onion, kale, kohlrabi and seasonings to your desired likeness and stir and allow to come to a boil again
  3. Once at a boil, turn heat down to med and let cook, covered, until potatoes are tender
  4. Add the remaining ingredients and allow to cook for another 6 minutes.
  5. Remove from heat and allow to slightly cool
  6. Enjoy

SKILLET FRIED QUINOA WITH VEGGIES AND SPRING ROLLS

INGREDIENTS

  • 2 cups quinoa, cooked in vegetable broth
  • ¼ cup green onions, chopped
  • 1 cup of bok choi, chopped
  • 1 cup of lettuce, chopped
  • ½ cup of kale, chopped
  • ½ cup of purple potatoes, skillet fried, recipe on blog
  • 1 teaspoon sesame seed oil or oil of choice
  • ½ teaspoon of sea salt
  • ⅛ teaspoon crushed red pepper
  • 1 teaspoon onion powder
  • 1 teaspoon basil
  • 1 teaspoon fresh ginger, minced
  • Skillet
  • Spatula
  • Spring roll/ rice paper

INSTRUCTIONS

  1. Take your skillet and over medium heat, add your sesame seed oil and allow to get hot
  2. Add your vegetables and seasonings to skillet and allow to cook 3-4 minutes
  3. Add cooked quinoa and more oil if needed and allow to cook another 5 minutes while stirring
  4. Remove from skillet and allow to cool
  5. Enjoy
    • For spring rolls, wet rice paper and stuff with same ingredients aside from quinoa, roll up and enjoy

KOHLRABI SANDWICH

INGREDIENTS

  • 1 head of kohlrabi, washed and thinly sliced
  • 1 head of lettuce, washed
  • 1 tomato, sliced
  • ½ cucumber, peeled and sliced
  • 1 purple potato, washed, peeled and thinly sliced
  • Grapeseed oil
  • ⅛ teaspoon Sea salt
  • 1 teaspoon Onion powder
  • 1 teaspoon Oregano
  • 1 teaspoon Dill
  • ⅛ teaspoon Cayenne
  • Skillet

INSTRUCTIONS

  1. Take skillet and add oil over med high heat
  2. Once hot add thinly sliced potatoes and remove from heat once golden brown and season to your desiredness with seasonings
  3. On a plate take one slice of kohlrabi and add a piece of lettuce, slice of tomato, slice of cucumber and a few slices of your fried potatoes and add onto
  4. Cap off with another piece of sliced kohlrabi and enjoy your kohlrabi sandwich

KOHLRABI FRIES

INGREDIENTS

  • 2.5 pounds Kohlrabi (about 2 medium to large bulbs)
  • 3 tablespoons avocado oil (divided)
  • 1 teaspoon garlic powder, optional
  • 1/2 teaspoon of cayenne
  • 1 teaspoon of oregano
  • 3/4 teaspoon of salt
  • sliced green onions or chives

INSTRUCTIONS

  1. Preheat oven to 425 degrees Fahrenheit
  2. Meanwhile, prepare the kohlrabi. Discard stems/leaves. Remove the tough end
  3. Carefully cut each kohlrabi in half, remove/discard core and peel. Turn each half down so the large flat portion is on the surface and cut in 1/2 inch slices. Then cut those slices into fries, about 1/3 inch to 1.2 inch thick.
  4. Place kohlrabi fries in a clean tea towel to remove excess moisture.
  5. Place kohlrabi in bowl and toss with 2.5 tbls oil, garlic powder, cayenne, and oregano.
  6. Grease a large baking sheet with the remaining oil.
  7. Place kohlrabi fries on baking sheet and spread in single layer. Bake for about 30 min, turning halfway.
  8. Transfer to serving dish and garnish with green onions.
