RECIPE: Spinach & Garlic Scape Pesto

7-10 garlic scapes

One bunch spinach

3-4 T Olive oil

2T lemon juice or apple cider vinegar

Salt & Pepper to taste

Place the garlic scapes and lemon juice into a blender or food processor and blend til scapes are broken down considerably. 

Add the spinach and blend well, then with the food processor running, drizzle in the olive oil. Taste for salt and pepper, adjust as needed.
